A turnkey tender coconut water plant with aseptic extraction, enzyme deactivation, microfiltration or UHT treatment, and aseptic or hot-fill packaging in bottles, cans or cartons.
Coconut water is naturally near-sterile inside the nut and extremely fragile outside it. Two enzymes — peroxidase and polyphenol oxidase — cause the characteristic pink discoloration and flat taste that ruins most first attempts at packaging it. This line controls both: nuts are washed and sanitised, opened in a closed extraction station that minimises air contact, and the water is immediately chilled, then given a controlled thermal or high-pressure treatment sufficient to deactivate peroxidase without cooking the delicate flavour. Aseptic filling into PET, cans or cartons then delivers 6–12 months of ambient shelf life. The line also handles blended variants — coconut water with pulp, or with lime and mint.

Common questions.
Why does packaged coconut water turn pink?+
Residual peroxidase activity oxidises phenolic compounds after packing. If the thermal or high-pressure treatment is under-dosed the enzyme survives and colour drifts over weeks. We validate peroxidase deactivation as a release test, not just a process setting.
Is HPP better than UHT for coconut water?+
HPP preserves flavour better and is preferred for premium chilled distribution, but it needs cold-chain logistics and has a higher per-litre operating cost. UHT plus aseptic filling is the practical choice for ambient distribution across India.
