Pomegranate juice is a premium, export-relevant product and it is very easy to get wrong. Whole-fruit pressing is cheap and extracts more, but it drags tannins and bitter compounds from the rind and pith into the juice, producing an astringent product that no premium brand can sell. This line instead uses a mechanical aril separator to release the arils cleanly, then a gentle belt or bladder press. Downstream, ultrafiltration and cold clarification stabilise the colour that anthocyanin-rich pomegranate juice otherwise loses within weeks. The plant is configured for both retail juice and 65 °Bx concentrate, which is where most of the export value sits.

Common questions.
Why not press the whole pomegranate?+
Whole-fruit pressing extracts more liquid but also extracts rind tannins, which make the juice astringent and bitter. Aril separation costs a few points of yield and buys you a premium-sellable product.
How do I stop the juice turning brown?+
Pomegranate colour comes from anthocyanins, which degrade with heat, oxygen and light. We control all three — deaeration before pasteurisation, a short high-temperature-short-time profile, and amber or fully-sleeved packaging.
